At least on the Enterprise, before Archer's mutiny, she had projects to keep an eye on in addition to her duties. Here, her duties are few, and her projects are non existent. The lab remains a distinct possibility, but something - pride, if she allowed herself to see it - keeps her from asking for a workspace. It's foolish and illogical and so she's trying to beat the shit out of a punching bag.
